Edit Object Display

For ADT or ACA users, there is a perhaps little know right-click shortcut option called Edit Object Display (may have been called Entity Display or something similar in pre-2009 versions).
This command can be accessed before or after selecting an object and depending on the object selected it gives you quick access to the basic properties of that object. To access the command before selecting an object, you need to type objectdisplay into the command line (this is only for 2009, pre-2009 the command line entry may be different) otherwise, select the object that you want to modify and right click to get the option.
Side note: After you right click and start the command, if you press F2 you can see what the name of the command is - write that down and next time you can type that in before you select the object.

Once the command is active you will see this dialog box:

From this dialog box, simply select the property you wish to change. The color button will bring up the color palette, linetype will bring up the linetype list, etc. This works for all autocad objects.
Now, for ADT objects like doors, windows, walls, etc. You will also get some other options like Materials and Display Properties:

This is extremely useful if you have a single door, window, etc that you want to modify the display of at the object level rather than at the style level.

One last tip: I assign this command to my F7 key - that way I can quickly edit properties without having to type anything!
